The transformation from a family butcher shop to a gourmet food brand required more than a new storefront. Büyüksimitci Et needed to modernize its core operations—boosting throughput, ensuring hygiene, and speeding up packaging, especially during seasonal peaks. In a warm climate, freshness and presentation are critical, and any new solution had to be intuitive for staff while integrating smoothly with the retail system.

High performance—from slicing to labeling

Bizerba delivered a turnkey solution centered around high-performance slicing and packaging, combined with weighing and POS integration. Core components included the VSP F automatic slicer, SPC 21 Elixa packaging machine, Q1 400 hanging retail scale, and FK 23 meat & bone saws—all tailored to the customer’s production needs.

Fully operational within weeks

The Bizerba team provided label design, slicing presets, and seamless connection to the store’s point-of-sale system. Full staff training ensured a smooth handover and quick ramp-up. Despite a tight timeline, the system was installed and running in just a few weeks.

RESULTS

In just one month of operation, Büyüksimitci Et has seen faster packaging, less waste, and more consistent product quality. Sales of sliced pastrami have improved significantly, and staff appreciate the ease of use and reduced manual workload. Hygiene and presentation standards have also been raised.

Packaging speed has improved by 15–20% and slicing loss has decreased by about 10%.
